My family can’t agree on whether to eat banana or pumpkin bread, so I decided……..why not both! Wonderful for breakfast, and for a special twist, turn the slices into French toast! I always give this out to my neighbors and family with their Christmas gifts.
Ingredients
  • 1 can pumpkin
  • 1/4c. Oil
  • 1/2c. Applesauce
  • 2/3c. milk
  • 4 large eggs
  • 3 ½ c. Flour
  • 2c. Sugar
  • 1c. Brown Sugar
  • 2tsp baking soda
  • 1tsp cinnamon
  • 1 tsp. nutmeg
  • 1.8tsp cloves
  • 1/4tsp pumpkin pie spice
  • 3 medium bananas mashed
  • 2 tsp vanilla
Instructions
  1. Preheat oven to 350. Grease 2 loaf pans. Beat together pumpkin, oil, milk, applesauce, and eggs until smooth.
  2. In a separate bowl, combine all dry ingredients. Gradually add them to the pumpkin mixture.
  3. In a small bowl, mash bananas with the vanilla. Add the bananas to the rest of the batter. Mix until combined.
  4. Pour into pans and bake 1hour. Let cool 10-15 minutes and remove bread from pans. Place on a wire rack and cool completely.
